To make creamy clam sauce pasta, you’ll need:

  • 3 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup olive oil
  • 2 cans of chopped clams (6.5 ounces each)
  • 1/2 cup white wine
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1/2 cup heavy cream
  • 1/4 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/4 cup freshly grated Parmesan cheese
  • 2 tablespoons freshly chopped parsley
  • 1 pound of pasta of your choice

 Instructions:

  • Bring a large pot of salted water to a boil and cook the pasta according to package instructions.
  • In a large skillet, heat the olive oil over medium heat. Add the garlic and red pepper flakes and sauté until fragrant, about 1 minute.
  • Add the clams and cook until the clams are cooked through about 3 minutes. Pour in the white wine and cook until the liquid has reduced by half, about 3 minutes.
  • Add the butter and melt. Sprinkle in the flour and whisk until combined. Cook for 1 minute.
  • Slowly pour in the cream and whisk until combined. Cook until the sauce has thickened, about 3 minutes.
  • Stir in the oregano, salt, and pepper. Reduce the heat to low and stir in the Parmesan cheese.
  • Drain the cooked pasta and add it to the skillet. Toss to combine.

Garnish with freshly chopped parsley and serve. Finish it off by adding the cooked pasta to the skillet and tossing it to combine. Serve hot and enjoy!
